Which GPU and brand would be best for rendering and animation?
The more VRAM the better, so the 3090 wins, but I would look for a 4090.
There are rumors about an upcoming 5070 Ti Super with 24 GB VRAM, but that could be wishful thinking.
So the rtx3090 would be better than so the 5070ti?
If you want to use the AI render feature or large textures, yes, you need as much VRAM as possible for this. The 5070 Ti has 16 GB VRAM and the 3090 has 24 GB VRAM. The 5070 Ti has 8960 Cuda Cores while the 3090 has 10496 Cuda Cores.
I have an MSI RTX 4090 that is 2 years old and still flies. Even has 24gb of vram and the ram was the fastest DDR6 on the market at the time. 3 fans and quiet as a mouse. Use this as a benchmark. Keep in mind this beast now costs 3x what I paid for.

4090 would be better. It’s x2 the speed roughly of the comparable 3090.

@Sophus Not in my case (no pun intended). The 3 fans keep it quite cool and my CPU is water cooled, so I haven’t seen a spike above 50 or so.

It has not much to do with how hot your GPU gets. It’s more about the hideous design that Nvidia choose for the power connectors starting with the 40xx series where there is no proper contact or load balancing as far as I understood it correctly. I hope they do someone different with the 60xx series onwards.
