If you want to see real-time adjustments, you’ll need to be in Preview mode.
As for the issue where the character’s mouth won’t open fully, I suspect it’s caused by the active Grab Neutral Pose. Based on your video, the current active Neutral Pose was captured using values from the demo video’s female actor. Once you switch the video source, that Neutral Pose is no longer suitable, so you’ll need to clear it or perform a new Grab.
